Protein Pancakes

Who doesn’t love a pancake!

Why not make them more nutritious and satisfying by increasing the protein content using 2 simple ingredients – gram flour (from chickpeas) and protein powder. Also by using ground flaxseed we are adding good fats and more fibre so there’s no reason not to enjoy this style of pancakes that you can adapt to suit your tastes, eg use a plant based or whey protein powder depending on what you like.

I made these plant based (apart from adding the dairy yoghurt to serve for an extra protein boost) and I added something you may not have used before  to supercharge the nutritional benefits.

I used:

  •  100ml of oat milk
  • 1 tablespoon gram flour
  • 1 tablespoon regular flour (you could use oat flour of ground almonds for gluten free pancake)
  • 1 tablespoon ground flaxseed
  • 25g chocolate protein powder
  • 2 eggs
  • 1 banana (part of this was used for serving and not blended)
  • cinnamon

Blend well and fry one side until small bubbles form then flip – I use a lid on pan so heat can be lower (better for the planet).

Serve with berries, banana, coated pumpkin seeds, yogurt or anything you like! 

My version served with 100g of Fage 0% yoghurt contained approx 600 calories, 45g of protein, 23g of fat and 59g of carbohydrate so a good balanced meal a opposed to regular pancakes that would be lower in fibre and protein and higher in carbs.

So here is the superfood you may not have tried before…. bee pollen (tastes slightly sweet) which I sprinkled on because it looks pretty and has so many nutritional benefits including several antioxidants to help fight damaging free radicals, vitamins, minerals, enzymes and it is a plant based source of protein. It can help with immunity, inflammation and also some allergies however pregnant women should not take it, those on blood thinners and as always start taking something in small quantities to be sure you don’t have a reaction.
